Sourdough Pancakes

It is tradition in our family to have a special breakfast on birthdays. When we were children our special breakfast consisted of hot chocolate and cookies, growing up it become pancakes!

There a number of pancakes recipes that are close to my hart, NYC’s Sarabeth’s is one of them, but this year I decided to make pancakes using my starter. I thought it appropriate to mark my second birthday in lockdown and almost one year since I started my sourdough journey!

I have been trying and testing several recipes for sourdough pancakes and Elena’s one from “il mio pane” is by far my favourite one.

This recipe makes about 10 pancakes

Ingredients

  • 1 egg
  • 120g almond milk
  • 75g liquid starter
  • 100g plain flour
  • 15g caster sugar
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 18g melted butter

Method

1 Melt the butter and set aside.

2. Mix egg, milk and starter in a bowl.

3. Add the flour, baking soda, salt and sugar and combine well using a whisk until there are no lumps and you have a smooth batter.

4. Incorporate the melted butter to the flour and egg mixture.

5. Cover and let it rest at room temperature for 30 minutes.

6. Warm up a pancake pan and spoon in about 1/4 cup of batter at the time. Cook for few minutes until you see bubbles, flip it and let it cook for one more minute. Repeat until you have used all the batter.

7. Serve it with fresh fruit and maple syrup or butter or any other topping you might like!

Notes

1. You can make the batter the day before, let it rest in the fridge overnight and take it out at room temperature for about one hour

2. Pancakes freeze very well in an air tight container. Then all you need to do is let them defrost and warm them up in the toaster

3. The liquid starter does not need to be ripe, I usually use discarder starter. I would suggest not using discard that is too old or the pancakes may taste a bit sour.
